In a medium bowl whisk together flour, sugar, and salt. In a separate bowl whisk together, eggs and milk. Slowly pour the milk mixture into the flour, whisking until incorporated. Stir in melted butter and vanilla. The batter will be thin.
Add 1 Tbsp butter to a large non-stick pan and turn to medium heat. Once pan is heated pour batter in and cook for 1-2 minutes or until lightly golden brown. Flip and cook the other side, remove and spoon whipped goat cheese in the middle and gently roll it into the center. Serve with fresh fruit and powdered sugar, if desired.
For the whipped goat cheese: Using an electric mixer, whip goat cheese, cream, and honey until light and fluffy.
